The best and by quite a long way

is Mos Def "Many People" which covers Eleanor Rigby. A seriously brilliant track form the much maligned Hip Hop genre..

versions by soul singers are usually pretty good

the one that most easily comes to mind is Otis Redding's version of Day Tripper. Better than the original. Easy.

Also, I once heard on radio a version of I Want to Hold Your Hand which sounded exactly like the original except they used the lyrics of "Stairway to Heaven" instead.
