Well, don't necessarily have to be acoustic but need a stripped down sound. Am I making sense? Probably not... anyway, relatively small bands that immediately spring to mind.

apart from the obvious singer-songwriters out there,

check out some of the avant stuff associated with the downtown scene in new york and john zorn's tzadik label.

have a listen to e.g. the masada string trio, a three-piece that sounds like modern jewish chamber music. eclectic and stripped down. listen to okkyung lee, also on the tzadik label, for some nice contemporary cello work!
