I've done it quite a few times, but wouldn't go again.
Some tips if you want:
a) don't go to vidal sassoon. they will make you look like something out of star trek and you will have to get your hair cut again. the toni and guy school is the best - basically anywhere but the vidal sasoon 'creative' school
b) the hairdresser does photograph you for their portfolio but it's nothing to worry about - it's really just a snapshot
c) dress very badly. honestly - this is the only way to guarantee they won't fuck up your hair by doing some futuristic ridiculous haircut
d) say what you want and be adamant. it will still look nothing like what you want at the end, but it won't be embarrassing. the longer your hair is, the better off you are because they are a lot more careful then.
My single worst experience was when I actually bothered dressing up and going. I ended being put on a podium in a classroom of about forty Japanese students. One of the head stylists proceeded to cut my hair very very slowly for about forty minutes, while tutting every five seconds because of the crapness of my posture. Facing me was another 'model' having the worst haircut in the world by another head stylist. It was purple and she looked like Space Cindy. It really was atrocious. There was no mirror. Then I got off the stage and these students crowded around me, with their cameras, telling me to turn around, and then actually turning me around in order to get their photograph. It was HORRENDOUS. Then I saw it for the first time and there was one very long bit at one side and one very short bit at the other and a terrible short unflattering fringe. When I got home, after searching furiously for a hat in TopShop, my flatmates started uncontrollably laughing at me.
ruin her hair somewhere in London. She said she looked like a robot from the future with grey/purple hair, and wouldn't let anyone see her until she'd had it re-dyed. Friends who've been to the Toni and Guy academy in manchester have had no such problems though, but waiting list can be looong
be prepared for it to take 1.5-2 hours if you go to toni & guy. there you can also choose from their generic toni & guy cuts, so you'll have some idea how it will turn out.
i'm more tempted to go with one of these 'creative' ones, but maybe no longer after zsa zsa's post...
about your question - it depends. If it's for staff training type things, it doesn't matter at all, it's more about the trainee learning the techniques etc, but if it's for a show or something, then unfortunately model 'looks' (height etc) are needed too.

as long as they have hair....and generally having quite a bit of it helps. You have no option in what they do to it, though.
