sometimes i guess its understandable if a band is releasing a live album during the peak of their career, for example obviously Alive! is full of overdubs and some of Alive 2 is even studio recorded! buuuut when it comes to archive stuff i wish bands/artists who are already hugely successful could just have some perspective and not fuck about.
cases in point:
1. neil young removed cinammon girl from the recent crazy horse live set because it was sung out of tune. it's been available on bootlegs for years and its missing from the official release!
2. the bowie reissue thats about to come out is edited. they were about to release it including stage banter and a bit where they fuck up a song at the start, but now its been changed to edit that out and make it more 'perfect'

anyone who stops respecting an artist because there are a couple of mistakes on a live album doesn't deserve to be taken seriously.
Talking of Neil Young, I discovered on Monday that wandering around London at night listening to Arc on headphones when you haven't been to bed in 36 hours is a pretty good way of making yourself mentally ill

volta one has been totally fucked with before its release, the crowed fade in and out, the drums dissapear to make way for noises, and this is so obviously edited and u can still hear the drums in the background, as if someone has turned them down, ive seen them quite a few times since they began and they have never EVER done that live ever

And apparently that bit at the start with the airport and baby noises wasnt done live either! And the bit where they're playng three songs at once! And the bit where you hear the voice of the guy who died three years before! I mean, WTF!

he'd record twenty shows and take the best solos, best vocals, best audience and cut them into the best possible night; the night where everything went perfect- in his mind. He'd even cut studio and live together. Listen to Bongo Fury sometime.
Type O Negative made a pseudo live record called "Origin Of The Feces" were the whole thing is scripted. They've got hecklers and fights and technical problems all part of the show but it's really cool, I wish more would do it.
I get your point though. As a ducument for posterity nothing beats: unfuckedaroundwith LIVENESS.

has different audio on the DVD and the CD - bits where Bruce sings on one but not the other and so on

the one with the orchestra that came out a couple of years ago - on the dvd the crowd don't sing along with Black Diamond very loudly so Paul Stanley gets them to do it again while he accompanies them yet on the CD version the crowd sing it loud and proud first time.

To be totally correct, it's not "live" as soon as it's recorded... so who really cares.
Live and Dangerous has loads of fixes on it. It's still fucking awesome though.
I don't normally enjoy live albums
but I make an exception for Joy Division as a) they didn't get to do many studio albums in their short lifespan and b) live they show off an aggressive punky side that often gets lost in the studio recordings.
I listened to 'live in preston' LP last night - bloody superb. There were horrendous flaws with the sound on one track and a long discussion with the soundman about playing everything through the bass amp (including booing) - it certainly felt undoctored and raw and I loved it.

What counts as not editing then? They're all multichannel recorded and mixed so levels and sounds are completely changed for the release. If it's multichannel recorded, they're use outboard gear on it during the mix and process the sounds loads... because that's just what happens when you're mixing a record.
I think what you're looking for is bootlegs rather than live albums!

have extra vocals, guitars, and crowd noise dubbed over or cut into them... thats a bit more than just balancing the levels

Dunno, I don't really have any issue with it as they cease to be live as soon as they're recorded. Listen to bootlegs then you won't have that problem.
