wensleydale is great to put on pizzas. seriously. it melts, but doesn't congeal, so stays nice and soft. yummy.

to be fair, an entire pizza with it on wouldn't be too great, but if you mix it up with double gloucester or red leicester it tastes hella good.

seriously, goats cheese is a taste explosion. it's got a kind of creamy texture, more so than emmental, but lacks the nutty taste, its more of a simple, clean taste.
